The Greenhouse

You may have noticed that The Greenhouse is no more. It received a lot of love and use since it's 2020 installation but time and weather took it's toll. We are in the process of replacing The Greenhouse with a New & Improved covered space. Stay tuned for more details.

German Style Pilsner

ABV: 5.20% IBU: 37.00 SRM: 3.00
Imported German 2-row barley and Roy Farms Adeena hops give this German-style pils its crisp, clean character. Warning: this beer's subtle grain sweetness, spicy hop aroma and refreshingly dry, hop-forward finish may elicit a spontaneous Prost!
AWARDS: 2017 Silver Medal-SIP NW Best of the NW

CATEGORIES: German, Lager, Pilsner

Citra IPA

ABV: 5.90% IBU: 50.00 SRM: 3.00
We like to call this one Sunshine In a Glass ... or Sunshine In Your Belly because it won't stay in that glass long. Our Citra® IPA is designed to be light and bright in both color and body. Your first sniff will elicit images of tropical fruit and citrus thanks to a healthy dose of Citra® hops. Enjoy a pint of this and you might just find yourself gazing skyward, pondering how in the heck sunshine made its way into your glass.

Mosaic Pale Ale

ABV: 5.30% IBU: 39.00 SRM: 5.00
A highly drinkable, hop forward beer with a classic American Pale Ale malt bill. Heavy handed Mosaic dry hopping gives this beer a nose packed full of citrus and mango. Up front aroma, balanced bittering and a moderate body just beg for another taste...and another...and another...
AWARDS: 2021 Silver Medal-Great American Beer Festival, 2019 Silver Medal-SIP NW Best of the Northwest, 2019 Bronze Medal-Best of Craft Beer Awards, 2018 Silver Medal-WA Beer Awards, 2017 Judges Pick-SIP NW Best of the NW

NW Red

ABV: 5.00% IBU: 40.00 SRM: 12.00
Our Northwest Red Ale provides a distinctly Northwest hop character balanced with a restrained malt sweetness. We use 2 Row barley along with Best Maltz Red X to create a rich, red color and a smooth, satisfying taste. A hint of chocolate seals the deal.

Robust Porter

ABV: 6.20% IBU: 45.00 SRM: 31.00
Rich in color and character, our robust porter conjures up memories of decadent chocolate treats dipped in coffee. Hints of dark chocolate, roasted coffee and light malty sweetness are the result of a complex malt profile including chocolate malt, roasted wheat and roasted rye.

Powder Tracks Winter Ale

ABV: 7.40% IBU: 51.00 SRM: 11.00
Old pathways lost under a blanket of freshly fallen snow make way for new tracks on trails yet to be made. Powder Tracks Winter Ale, a malt forward beer with chocolate and caramel notes touched with a hint of citrus aroma, will call you to forget the noise and embrace the quiet of a winter trail.

Dunkelweizen Doppelbock

ABV: 9.50% IBU: 23.00 SRM: 25.00
This is a rich, malty wheat beer brewed using traditional German decoction methods. A base of 2-Row, Wheat, Pilsner and Munich malts were supplemented with rich specialty malts like Chocolate and Special Aromatic for a hearty winter sipper. Fermentation with a German Hefeweizen yeast adds further complexity with notes of banana and clove.

Schwarzbier

ABV: 5.00% IBU: 19.00 SRM: 27.00
Thanks to a base of pilsner malt, Munich malt and a touch of dark, roasted malt, our take on the German black lager is a moderately dry lager with a mouthwatering roastiness. It's the perfect hybrid of malt flavor and lager crispness.

Mixtape Romeo

ABV: 5.00% IBU: 32.00 SRM: 3.00
In the entire history of humankind, there has never been a more profound expression of love than the personalized mixtape. Hours of deliberation about which songs to share from your home tape collection followed by hours of tiny handwritten playlists with tiny hearts incorporated wherever possible. Follow that with "play"-"record", change tape, "play"-"record" change tape............This beer is our mixtape for you. For this latest edition of our rotating dry hopped lager series, we first brewed the beer with pilsner malt for a light body and gentle malt sweetness. Then we lagered the beer for several weeks to create a clean, refreshing crispness. As our mixtape final song, we dry hopped with an experimental variety from New Zealand called NZ 102 for aromas of red fruit and citrus. Load it up, press play and enjoy.

Thesis Generator IPA

ABV: 6.90% IBU: 56.00 SRM: 3.00

Over here at Stoup, we miss our school days. We miss 5 paragraph essays, long story problems and wearing backpacks filled with pee chee folders. Why, oh why is the fun so fleeting?! In an effort to keep that school spirit alive, we decided it would be fun to write a thesis paper. Really, how hard could it be? To get started, we needed to generate a thesis statement. This is what we came up with: "To make a perfect IPA, you must use delicious ingredients and add just the right hops to make the flavor and aroma pop". Then we researched thousands of hop combinations and determined that Loral, Talus, Citra Cryo and El Dorado together would add aromas of pink grapefruit, berry and pineapple and would be freakin' delicious. Then we brewed our Thesis Generator IPA, drank it and determined that our thesis statement was 100% correct. Man, writing a thesis is soooo easy!

United by Hops IPA

ABV: 6.80% IBU: 65.00 SRM: 4.00
This is a special beer brewed on Veterans Day by a Veteran and built around the Veterans Hop Blend from Yakima Chief Hops (a blend of Idaho 7, Ekuanot, Azacca, HBC 630 and HBC 472). YCH is generously donating $3/lb sold to the HunterSeven Foundation - an organization dedicated to researching military exposures and their impact on the health of the Veteran population. We will also be donating a portion of proceeds to the HunterSeven Foundation.
This IPA has notes of berry, tropical fruit, stone fruit and a healthy dose of respect for all of our Veterans.  We have two Veterans here at Stoup. Brewer Shawn brewed the beer and Dale will be delivering the goodness to accounts around the city. Thank you Shawn and Dale and all of our Veterans for your honorable service.

Pike Brewing may not be the new kidz in Seattle, but they are the New Kidz on THIS block here in Ballard! We were so honored to brew this beer in collaboration with the iconic Pike Brewing Company for the grand opening of their Pike Brewing Ballard Taproom. We collaborated with head brewer Leslie to create an IPA recipe that incorporates some fun hopping techniques for a whole lot of citrus, berry and tropical aromas and flavors from Mosaic, Citra and a touch of Sabro. Welcome to the neighborhood, Pike!
